Ingredients
  

  • 4 Cornish game hens about 1 to 1.5 lbs each
  • 2 tablespoons olive oil
  • 2 limes juiced and zested
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Method
 

  1. Preheat your oven to 425°F (220°C) and position a rack in the center.
  2. In a bowl, whisk together olive oil, lime juice, lime zest, chili powder, cumin, garlic powder, salt, and pepper to create a zesty marinade.
  3. Pat each hen dry with paper towels. Rub the marinade all over the hens, making sure to coat under the skin and inside the cavity.
  4. Arrange the hens breast-side up on a foil-lined baking sheet or in a roasting pan, leaving space between each for even air circulation.
  5. Roast for 50–55 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
  6. Remove from the oven and let the hens rest for 10 minutes before carving—this locks in the juicy flavors.
  7. Carve into halves or quarters, garnish with extra lime wedges and fresh herbs, and serve with your favorite sides.
