Season chicken breasts with salt and pepper. Let rest for 10 minutes.
Heat olive oil in a skillet over medium-high heat. Sear chicken for 5–7 minutes on each side until golden and cooked through. Remove and set aside.
Reduce heat to medium. Sauté garlic in the same skillet for 30 seconds.
Pour in heavy cream and simmer for 3–5 minutes, scraping up any browned bits.
Whisk in Parmesan cheese gradually until sauce is smooth. Add chicken back to the skillet and simmer for 2–3 minutes.
Serve hot over pasta or vegetables. Garnish with chopped parsley.
