Ingredients

  • ¼ cup unsalted butter or more to taste
  • 2 cloves garlic minced
  • 1 cup whole milk or half-and-half
  • 1 cup freshly grated Parmesan cheese
  • Salt and freshly ground black pepper to taste
  • Pinch of freshly grated nutmeg optional
  • Chopped fresh parsley for garnish

Method

  1. In a large saucepan over medium-low heat, melt the butter. Add the minced garlic and sauté until fragrant and golden, about 1 minute.
  2. Pour in the milk gradually, stirring constantly. Bring the mixture to a gentle simmer—avoid a rolling boil to keep it smooth.
  3. Reduce heat to low and whisk in the Parmesan cheese in small batches until completely melted and silky.
  4. Stir in salt, pepper, and a pinch of nutmeg if desired. Taste and adjust seasonings.
  5. Spoon over pasta, chicken, or shrimp. Garnish with chopped parsley for a pop of color.
