Ingredients
  

  • 3 20 ounce cans pineapple tidbits, drained thoroughly
  • 2 15 ounce cans mandarin oranges, drained
  • 1 cup sour cream full-fat works best
  • 2 cups mini marshmallows
  • 1 cup sweetened shredded coconut
  • 1/4 cup maraschino cherries drained and halved (optional)
  • 1/3 cup chopped pecans or walnuts optional

Method
 

  1. Drain all canned fruits thoroughly, placing them in a colander for at least 10 minutes to remove excess liquid. Pat dry with paper towels if needed.
  2. In a large mixing bowl, combine the well-drained pineapple tidbits and mandarin orange segments.
  3. Add sour cream to the fruit mixture and gently fold until fruits are evenly coated.
  4. Carefully fold in the mini marshmallows and shredded coconut, being careful not to crush the fruit.
  5. If using, add maraschino cherries and chopped nuts, folding just until incorporated.
  6. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight, to allow flavors to meld.
  7. Before serving, gently stir the ambrosia salad and transfer to a decorative serving bowl.
