Ingredients

  • 1 pound ground beef
  • 1 medium onion diced
  • 2 garlic cloves minced
  • 1 14.5 oz can diced tomatoes, undrained
  • 1 15 oz can tomato sauce
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 4 cups beef broth
  • 4 ounces cream cheese cubed
  • Salt and pepper to taste
  • Optional toppings: shredded cheddar sour cream, cilantro, sliced jalapeños

Method

  1. In a large pot over medium heat, brown the ground beef until no longer pink. Drain any excess fat.
  2. Add diced onion and sauté until translucent, about 3 minutes. Stir in garlic and cook another minute until fragrant.
  3. Pour in diced tomatoes, tomato sauce, and beef broth. Sprinkle chili powder, cumin, salt, and pepper. Stir well to combine.
  4. Bring the mixture to a gentle boil, then reduce heat to low. Simmer uncovered for 15 minutes to let flavors meld.
  5. Stir in cream cheese cubes until completely melted for a luxuriously creamy texture.
  6. Serve hot, garnished with your favorite keto-friendly toppings.
