Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 4 cups canned crushed tomatoes
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon sugar
  • 1 cup fresh basil chopped

Method
 

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for 5 minutes until translucent.
  2. Add minced garlic and cook for another minute until fragrant, being careful not to brown it.
  3. Stir in crushed tomatoes and vegetable broth. Simmer gently for about 15 minutes to allow flavors to meld.
  4. Remove from heat and blend the soup using a blender or immersion blender until smooth and creamy.
  5. Return soup to pot on low heat and stir in heavy cream. Season with salt, pepper, and sugar to taste.
  6. Add chopped fresh basil and simmer for an additional 5 minutes to infuse flavor.
  7. Serve hot with a drizzle of cream and garnish of fresh basil. Enjoy with crusty bread or grilled cheese.
