Method
- Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for 5 minutes until translucent.
- Add minced garlic and cook for another minute until fragrant, being careful not to brown it.
- Stir in crushed tomatoes and vegetable broth. Simmer gently for about 15 minutes to allow flavors to meld.
- Remove from heat and blend the soup using a blender or immersion blender until smooth and creamy.
- Return soup to pot on low heat and stir in heavy cream. Season with salt, pepper, and sugar to taste.
- Add chopped fresh basil and simmer for an additional 5 minutes to infuse flavor.
- Serve hot with a drizzle of cream and garnish of fresh basil. Enjoy with crusty bread or grilled cheese.
