Method
 

  1. In a medium saucepan, combine fresh apple cider with cinnamon and mixed spices. Simmer gently over low heat until reduced by about half. This concentrated reduction will infuse the cake with intense apple flavor.
  2. Whisk together your dry ingredients in a bowl and, in another bowl, blend the vegan dairy substitute, egg replacer, sweetener, and the spiced apple cider reduction. Fold the wet ingredients into the dry and mix until just combined, preserving a light texture.
  3. Pour the batter into a prepared 9x13-inch pan. Bake in a preheated oven until the cake is set but still moist, about 35 minutes. Allow to cool before glazing.
  4. Whisk together your glaze ingredients, then drizzle liberally over the cooled cake. The glaze seals in the aromatic apple cider flavor and gives the cake its signature doughnut feel.
