Crisp Marinated Cucumbers

These marinated cucumbers are made with thin cucumber and onion slices tossed in a sweet and tangy vinaigrette for a sensational side dish!

Ingredients
  

  • 4 medium cucumbers thinly sliced
  • 1 small red onion thinly sliced
  • ½ cup white vinegar
  • ¼ cup water
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon dried dill optional
  • Pinch of red pepper flakes optional

Method
 

  1. In a bowl, whisk together white vinegar, water, sugar, salt, and pepper until sugar is dissolved. Stir in dill and red pepper flakes if using.
  2. With a sharp knife or mandoline, cut cucumbers and red onion into uniform, thin slices for even marinating.
  3. Transfer cucumber slices and onion into a large bowl. Pour the vinaigrette over the top and gently toss to coat every piece.
  4. Cover the bowl with plastic wrap and refrigerate for at least 8 hours (or overnight) to let flavors meld.
  5. Give the salad a final stir, then transfer to a serving dish. Garnish with fresh dill or a sprinkle of black pepper.
