Ingredients
  

  • 8 bone-in skin-on chicken thighs (about 3–4 pounds total)
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • Cooking spray

Method
 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with aluminum foil and lightly coat with cooking spray.
  2. Pat the chicken thighs dry with paper towels—this helps the skin get extra crispy.
  3. In a small bowl, whisk together olive oil, salt, pepper, garlic powder, onion powder, smoked paprika, and thyme to form a spice rub.
  4. Rub the spice mixture evenly over each chicken thigh, ensuring every crevice is covered.
  5. Arrange the thighs skin-side up on the prepared baking sheet, spacing them at least 1 inch apart.
  6. Bake in the preheated oven for 50–60 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crisped and golden.
  7. Remove from oven and let rest for 5 minutes before serving to lock in juices.
  8. Garnish with fresh parsley or a squeeze of lemon, if desired, and serve hot.
