- Preheat your oven to 350°F (175°C). Line a baking sheet with aluminum foil and lightly coat with cooking spray.
- Pat the chicken thighs dry with paper towels—this helps the skin get extra crispy.
- In a small bowl, whisk together olive oil, salt, pepper, garlic powder, onion powder, smoked paprika, and thyme to form a spice rub.
- Rub the spice mixture evenly over each chicken thigh, ensuring every crevice is covered.
- Arrange the thighs skin-side up on the prepared baking sheet, spacing them at least 1 inch apart.
- Bake in the preheated oven for 50–60 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crisped and golden.
- Remove from oven and let rest for 5 minutes before serving to lock in juices.
- Garnish with fresh parsley or a squeeze of lemon, if desired, and serve hot.
