Ingredients

  • 2 pounds chicken wings split at joints, tips removed
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika smoked paprika works great too
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper optional, for heat

Method

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or aluminum foil for easier cleanup.
  2. Pat the chicken wings dry with paper towels. This step is crucial for achieving crispy skin.
  3. In a large bowl, combine olive oil, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper (if using).
  4. Add the dried chicken wings to the bowl and toss until they're evenly coated with the oil and spice mixture.
  5. Arrange the wings in a single layer on the prepared baking sheet, making sure they aren't touching.
  6. Bake for 15 minutes, then carefully flip each wing using tongs.
  7. Return to the oven and bake for another 15 minutes, or until the skin is crispy and golden brown and the internal temperature reaches 165°F (74°C).
  8. For extra crispiness, you can broil the wings for 2-3 minutes at the end of the cooking time.
  9. Remove from the oven and let rest for 5 minutes before serving.
