- Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.
- Wash the cauliflower head thoroughly and pat dry. Remove the leaves and stem, then cut into evenly sized florets.
- Place the cauliflower florets in a large mixing bowl. Drizzle with olive oil and toss to coat evenly.
- Add minced garlic, Italian herbs, salt, black pepper, and red pepper flakes (if using) to the bowl. Toss again until the florets are evenly coated with the seasonings.
- Spread the seasoned cauliflower in a single layer on the prepared baking sheet, making sure not to overcrowd the pan.
- Roast in the preheated oven for 20 minutes, then remove and sprinkle the Parmesan cheese evenly over the cauliflower.
- Return to the oven and roast for an additional 10 minutes, or until the cauliflower is tender and the cheese forms a golden-brown crust.
- Garnish with fresh chopped parsley before serving.
