Ingredients
  

  • 3 skinless boneless chicken breasts (about 1.5 pounds), cut into 1.5-inch pieces
  • 1 cup breadcrumbs preferably panko for extra crispiness
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs beaten
  • 1/4 cup all-purpose flour
  • Cooking spray or 2 tablespoons olive oil

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly coat with cooking spray.
  2. Cut the chicken breasts into 1.5-inch nugget-sized pieces, trying to keep them relatively uniform in size for even cooking.
  3. Set up your breading station with three shallow dishes: First dish with flour, 1/4 teaspoon salt, and 1/8 teaspoon pepper; Second dish with beaten eggs; Third dish with breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, onion powder, paprika, remaining salt, and pepper.
  4. Working with a few pieces at a time, dredge the chicken in the flour mixture, shaking off excess.
  5. Dip the floured chicken into the beaten eggs, allowing excess to drip off.
  6. Finally, coat the chicken in the breadcrumb mixture, pressing gently to ensure the coating adheres well.
  7. Place the breaded nuggets on the prepared baking sheet, leaving a little space between each piece. Lightly spray the tops with cooking spray or drizzle with olive oil for extra crispiness.
  8. Bake in the preheated oven for 15-20 minutes, flipping halfway through, until the nuggets are golden brown and the internal temperature reaches 165°F (74°C).
  9. Let the chicken nuggets rest for 5 minutes before serving with your favorite dipping sauces.
