- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly coat with cooking spray.
- Cut the chicken breasts into 1.5-inch nugget-sized pieces, trying to keep them relatively uniform in size for even cooking.
- Set up your breading station with three shallow dishes: First dish with flour, 1/4 teaspoon salt, and 1/8 teaspoon pepper; Second dish with beaten eggs; Third dish with breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, onion powder, paprika, remaining salt, and pepper.
- Working with a few pieces at a time, dredge the chicken in the flour mixture, shaking off excess.
- Dip the floured chicken into the beaten eggs, allowing excess to drip off.
- Finally, coat the chicken in the breadcrumb mixture, pressing gently to ensure the coating adheres well.
- Place the breaded nuggets on the prepared baking sheet, leaving a little space between each piece. Lightly spray the tops with cooking spray or drizzle with olive oil for extra crispiness.
- Bake in the preheated oven for 15-20 minutes, flipping halfway through, until the nuggets are golden brown and the internal temperature reaches 165°F (74°C).
- Let the chicken nuggets rest for 5 minutes before serving with your favorite dipping sauces.
