  • 18 fresh okra pods about 1 pound, sliced 1/3-inch thick
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • Optional: 1/4 teaspoon garlic powder
  • Optional: pinch of cayenne pepper for heat

Method
 

  1. Preheat your oven to 425°F (220°C). Position a rack in the middle of the oven.
  2. Wash the okra pods thoroughly and pat them completely dry with paper towels. This is crucial for achieving crispiness!
  3. Trim the stems and tips from each okra pod, then slice them into 1/3-inch thick rounds.
  4. In a large mixing bowl, toss the sliced okra with olive oil until evenly coated.
  5. Season with salt, pepper, and optional garlic powder and cayenne if using. Toss again to distribute the seasonings evenly.
  6. Spread the seasoned okra in a single layer on a large baking sheet. Avoid overcrowding for best results.
  7. Roast in the preheated oven for 10-12 minutes, stirring once halfway through cooking time, until the okra is golden brown and crispy around the edges.
