Ingredients
  

  • 2 cups white sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • ½ cup vegetable oil
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 2 cups chopped apples peeled, cored; about 2 medium apples
  • ½ cup chopped walnuts or pecans optional

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a large bowl, whisk together sugar, flour, baking soda, baking powder, salt, and cinnamon until well combined.
  3. In a separate bowl, beat eggs, then stir in oil, milk, and vanilla extract.
  4. Pour wet ingredients into the dry mixture, stirring gently until just combined.
  5. Fold in the chopped apples and nuts (if using) until evenly distributed in the batter.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 60 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
