- In a large bowl, whisk together sugar, flour, baking soda, baking powder, salt, and cinnamon until well combined.
- In a separate bowl, beat eggs, then stir in oil, milk, and vanilla extract.
- Pour wet ingredients into the dry mixture, stirring gently until just combined.
- Fold in the chopped apples and nuts (if using) until evenly distributed in the batter.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 60 minutes or until a toothpick inserted in the center comes out clean.
- Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
