  • 1 cup dark chocolate chips dairy-free
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Method
 

  1. Gather all your ingredients on a clean countertop, ensuring silken tofu, dark chocolate chips, maple syrup, vanilla extract, and salt are ready.
  2. In a small saucepan over low heat (or in short microwave bursts), melt the dark chocolate chips, stirring until smooth.
  3. Blend silken tofu in a high-speed blender on high until completely smooth and creamy, scraping down the sides as needed.
  4. Add melted chocolate, maple syrup, vanilla extract, and a pinch of salt to the blender. Blend until fully combined and smooth.
  5. Pour the mousse into individual dishes or a large bowl, scraping out every last bit for maximum yield.
  6. Cover and refrigerate the mousse for at least 1 hour (ideally 2–4 hours) to allow it to set and flavors to meld.
  7. While chilling, wash fresh berries and whip vegan cream (if using) to top the mousse later.
  8. Remove mousse from fridge, garnish with berries and whipped cream, then serve immediately.
