Method
- Gather all your ingredients on a clean countertop, ensuring silken tofu, dark chocolate chips, maple syrup, vanilla extract, and salt are ready.
- In a small saucepan over low heat (or in short microwave bursts), melt the dark chocolate chips, stirring until smooth.
- Blend silken tofu in a high-speed blender on high until completely smooth and creamy, scraping down the sides as needed.
- Add melted chocolate, maple syrup, vanilla extract, and a pinch of salt to the blender. Blend until fully combined and smooth.
- Pour the mousse into individual dishes or a large bowl, scraping out every last bit for maximum yield.
- Cover and refrigerate the mousse for at least 1 hour (ideally 2–4 hours) to allow it to set and flavors to meld.
- While chilling, wash fresh berries and whip vegan cream (if using) to top the mousse later.
- Remove mousse from fridge, garnish with berries and whipped cream, then serve immediately.
