- Heat 1 cup shortening in a large cast iron skillet over medium-high heat until it reaches 350°F (175°C).
- In a shallow bowl, combine flour, salt, and pepper. Mix well.
- Pat chicken pieces dry and coat each in the seasoned flour, shaking off any excess.
- Carefully place 2–3 pieces in the hot shortening and fry for 10–12 minutes, turning once, until golden-brown and juices run clear.
- Transfer chicken to a wire rack over paper towels and let rest for 5 minutes.
- Repeat frying remaining chicken pieces in batches until all are cooked through.
