Ingredients
  

  • 1 whole chicken cut into 8 pieces
  • 2 cups all-purpose flour
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 1 cup shortening lard or vegetable shortening

Method
 

  1. Heat 1 cup shortening in a large cast iron skillet over medium-high heat until it reaches 350°F (175°C).
  2. In a shallow bowl, combine flour, salt, and pepper. Mix well.
  3. Pat chicken pieces dry and coat each in the seasoned flour, shaking off any excess.
  4. Carefully place 2–3 pieces in the hot shortening and fry for 10–12 minutes, turning once, until golden-brown and juices run clear.
  5. Transfer chicken to a wire rack over paper towels and let rest for 5 minutes.
  6. Repeat frying remaining chicken pieces in batches until all are cooked through.
