- Preheat oven to 350°F (175°C). Grease a large baking dish with 1 tablespoon of the melted butter.
- In a small bowl, mix brown sugar, cinnamon, nutmeg, and a pinch of salt. Stir in the vanilla extract.
- Place the cored apples in the prepared dish. Spoon the sugar-spice mixture evenly into each apple cavity.
- Drizzle the remaining melted butter over the filled apples, then sprinkle chopped nuts on top, if using.
- Bake for 30–40 minutes, or until apples are tender and the filling is bubbly. For extra color, broil for 1–2 minutes at the end.
- Let the apples rest for 5 minutes before serving warm, topped with vanilla ice cream or whipped cream for a decadent fall dessert.
