- Prepare the Chinese cabbage by removing any damaged outer leaves. Cut the cabbage in half lengthwise, remove the core, and slice into 1-inch strips.
- Wash the cabbage thoroughly and pat dry with paper towels. Too much moisture will make your stir-fry soggy rather than crisp.
- Heat your wok or large skillet over medium-high heat. Add the vegetable oil and swirl to coat the cooking surface.
- Add the minced garlic and grated ginger to the hot oil. Stir quickly for 10-15 seconds until fragrant, being careful not to burn the garlic.
- Add the sliced Chinese cabbage to the wok. Toss quickly to coat with the garlic and ginger. Cook for about 2 minutes, stirring constantly.
- Pour in the soy sauce and Chinese rice wine, tossing to coat evenly. Continue to stir-fry for another 3-4 minutes until the cabbage is tender-crisp.
- Remove the wok from heat and drizzle with sesame oil. Add the sliced green onions and toss to combine.
- Transfer to a serving dish, sprinkle with sesame seeds if using, and serve immediately for the best flavor and texture.
