Ingredients
  

  • 1 14-ounce package smoked sausage, sliced into rounds
  • ¼ cup olive oil
  • 3 cloves garlic minced
  • 1 large red bell pepper diced
  • 1 medium onion diced
  • 2 cups broccoli florets
  • 2 cups cooked rice white or brown
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • Salt and black pepper to taste
  • Fresh parsley for garnish optional

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Add minced garlic and sauté for 30 seconds until fragrant.
  2. Add sliced smoked sausage to the skillet and cook for 3-4 minutes until browned on all sides, stirring occasionally.
  3. Add diced bell pepper and onion to the skillet. Cook for 3 minutes, stirring frequently, until vegetables begin to soften.
  4. Stir in broccoli florets and continue cooking for 2-3 minutes until they turn bright green but remain crisp-tender.
  5. Add cooked rice to the skillet and mix well to combine with the sausage and vegetables. Sprinkle with Italian seasoning, paprika, salt, and pepper.
  6. Spread the mixture evenly in the skillet and sprinkle mozzarella cheese over the top.
  7. Cover the skillet and cook on low heat for 2-3 minutes until cheese is melted and everything is heated through.
  8. Garnish with fresh parsley if desired and serve directly from the skillet.
