Ingredients
  

  • 2 pounds fresh strawberries hulled
  • 2 cups granulated sugar
  • 2 tablespoons fresh lemon juice

Method
 

  1. In a large saucepan over medium heat, combine strawberries and granulated sugar.
  2. Mash the fruit gently with a potato masher or fork until you reach your desired chunkiness.
  3. Stir in fresh lemon juice and bring the mixture to a steady boil, stirring constantly to prevent sticking.
  4. Reduce heat and simmer for 15–20 minutes, or until the jam thickens and coats the back of a spoon.
  5. Remove from heat and skim off any foam with a metal spoon.
  6. Ladle the hot jam into sterilized jars, leaving a ΒΌ-inch headspace. Seal with lids.
  7. Process jars in a boiling water bath for 10 minutes to ensure proper sealing.
  8. Carefully remove jars and let cool completely. Check seals before storing.
