  • 1 3-ounce package lime Jell-O gelatin mix (or your favorite flavor)
  • 1 cup boiling water
  • 1 15-ounce can crushed pineapple, drained
  • 1 cup mini marshmallows
  • ½ cup chopped walnuts or pecans
  • 1 12-ounce container frozen whipped topping, thawed

Method
 

  1. In a mixing bowl, dissolve the lime Jell-O mix in 1 cup of boiling water, stirring until completely dissolved.
  2. Stir in the drained crushed pineapple until evenly combined.
  3. Fold in mini marshmallows and chopped walnuts for that classic ambrosia texture.
  4. Gently blend in the thawed whipped topping until the salad is light and fluffy.
  5. Pour the mixture into a decorative mold or serving dish. Cover and refrigerate for at least 8 hours (or overnight) to set firmly.
  6. When ready, unmold onto a plate or scoop into bowls. Serve chilled and garnish with extra marshmallows or shredded coconut if desired.
