Easy Apple Cinnamon Muffins

These moist apple muffins with cinnamon have a sweet and crunchy streusel topping; an easy recipe to make with your favorite fall apples.

Ingredients
  

  • cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 large apples peeled, cored, and diced (about 1 cup)
  • 1 large egg
  • ½ cup granulated sugar
  • ¼ cup packed brown sugar
  • ½ cup milk
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla extract
  • cup packed brown sugar for streusel
  • 3 tablespoons all-purpose flour for streusel
  • 1 teaspoon ground cinnamon for streusel
  • 3 tablespoons cold butter cubed (for streusel)

Method
 

  1. Preheat your oven to 425°F (220°C). Line a 6-cup muffin tin with paper liners or grease the cups.
  2. In a small bowl, combine streusel ingredients: brown sugar, flour, cinnamon, and butter. Use your fingertips to pinch until crumbly. Set aside.
  3. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In another bowl, beat the egg with granulated sugar, brown sugar, milk, oil, and vanilla until smooth.
  5. Fold the wet ingredients into the dry ingredients just until combined. Gently stir in the diced apples—be careful not to overmix.
  6. Divide the batter evenly among the muffin cups. Sprinkle a generous amount of streusel over each muffin.
  7. Bake for 5 minutes at 425°F, then reduce oven temperature to 350°F (175°C) and bake an additional 20–22 minutes, or until a toothpick comes out clean.
  8. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
