Ingredients
  

  • 1 medium acorn squash halved and seeded
  • 2 tablespoons unsalted butter softened
  • 2 tablespoons brown sugar packed
  • Pinch of salt and pepper optional

Method
 

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Place each squash half cut-side up. Use a pastry brush to spread butter evenly in the cavity.
  3. Spoon brown sugar into the center of each half, then season with salt and pepper if desired.
  4. Bake for 60 minutes, or until the flesh is soft when pierced with a fork—this brings out the natural sugars and creates a caramelized edge.
