Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup milk warmed
  • 2 large eggs at room temperature
  • 2 tablespoons melted butter plus extra for the pan
  • ½ teaspoon salt
  • 1 teaspoon sugar optional, for a hint of sweetness
  • ½ cup water lukewarm

Method
 

  1. In a mixing bowl, whisk together eggs, warm milk, water, salt, and sugar until smooth.
  2. Add flour and melted butter; whisk until no lumps remain and batter is thin.
  3. Let the batter rest for 5 minutes to hydrate the flour and improve texture.
  4. Heat a nonstick skillet over medium heat; brush lightly with melted butter.
  5. Pour 2 tablespoons of batter into the pan, swirling to cover the bottom in a thin layer.
  6. Cook 1–2 minutes until edges lift and the bottom is golden; flip and cook another minute.
  7. Transfer cooked blini to a plate and cover loosely to keep warm; repeat with remaining batter.
