- In a mixing bowl, whisk together eggs, warm milk, water, salt, and sugar until smooth.
- Add flour and melted butter; whisk until no lumps remain and batter is thin.
- Let the batter rest for 5 minutes to hydrate the flour and improve texture.
- Heat a nonstick skillet over medium heat; brush lightly with melted butter.
- Pour 2 tablespoons of batter into the pan, swirling to cover the bottom in a thin layer.
- Cook 1–2 minutes until edges lift and the bottom is golden; flip and cook another minute.
- Transfer cooked blini to a plate and cover loosely to keep warm; repeat with remaining batter.
