Ingredients
  

  • 2.5 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter softened
  • 2 large eggs
  • 1 cup milk
  • 1 tsp vanilla extract
  • 2 cups fresh blueberries
  • 2 tbsp coarse sugar for sprinkling

Method
 

  1. Preheat the oven to 375°F (190°C). Grease and flour a 9×13-inch baking dish.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Using an electric mixer, beat the softened butter into the dry ingredients until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk eggs, milk, and vanilla extract until combined.
  5. Pour the wet ingredients into the dry mixture and stir until just blended.
  6. Gently fold in the fresh blueberries, ensuring they’re evenly distributed.
  7. Spread the batter into the prepared pan, smoothing the top with a spatula.
  8. Sprinkle coarse sugar over the batter for a delightful crunch and shimmer.
  9. Bake in the preheated oven for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  10. Allow the cake to cool in the pan for 10 minutes before slicing into squares.
