- Preheat your oven to 350°F (175°C) and wrap the tortillas in foil.
- In a medium skillet over medium heat, warm the olive oil. Add onion and jalapeño; sauté until translucent, about 3–4 minutes.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add drained black beans, cream cheese, and half the cheddar. Stir until the cream cheese melts and the mixture is creamy. Season with salt and pepper.
- Spoon the bean mixture down the center of each tortilla, dividing evenly.
- Sprinkle remaining cheddar cheese on top, then roll up burritos, folding in the sides to seal.
- Place foil-wrapped burritos on a baking sheet and bake for 10–12 minutes or until heated through and the cheese is melted.
- Carefully unwrap, garnish with cilantro and a squeeze of lime. Serve hot with your favorite salsa or guacamole.
