Easy Cheesy Black Bean Burrito

This bean burrito recipe makes a hearty black bean and cheese filling for tortillas that's flavored with onion, garlic, cream cheese, and jalapeño.

Ingredients
  

  • 1 tablespoon olive oil
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1 jalapeño seeded and diced
  • 1 15-ounce can black beans, drained and rinsed
  • 1/4 cup cream cheese softened
  • 1 cup shredded cheddar cheese
  • 2 10-inch flour tortillas
  • Salt and freshly ground black pepper to taste
  • Optional garnishes: chopped cilantro lime wedges, hot sauce

Method
 

  1. Preheat your oven to 350°F (175°C) and wrap the tortillas in foil.
  2. In a medium skillet over medium heat, warm the olive oil. Add onion and jalapeño; sauté until translucent, about 3–4 minutes.
  3. Stir in garlic and cook for 30 seconds until fragrant.
  4. Add drained black beans, cream cheese, and half the cheddar. Stir until the cream cheese melts and the mixture is creamy. Season with salt and pepper.
  5. Spoon the bean mixture down the center of each tortilla, dividing evenly.
  6. Sprinkle remaining cheddar cheese on top, then roll up burritos, folding in the sides to seal.
  7. Place foil-wrapped burritos on a baking sheet and bake for 10–12 minutes or until heated through and the cheese is melted.
  8. Carefully unwrap, garnish with cilantro and a squeeze of lime. Serve hot with your favorite salsa or guacamole.
