Method
- Cook the fettuccine in a pot of salted boiling water until al dente. Drain and set aside.
- Season chicken with salt and pepper. In a large skillet, heat olive oil over medium heat. Cook chicken for 6–7 minutes on each side until done. Remove and slice.
- In the same skillet, melt butter and sauté garlic for 1 minute. Add heavy cream and bring to a simmer.
- Stir in Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
- Add cooked pasta to the sauce, toss to coat. Top with sliced chicken and garnish with parsley if desired. Serve immediately.
