Easy Chicken Alfredo

Ingredients
  

  • 2 boneless skinless chicken breasts
  • 8 ounces fettuccine pasta
  • 2 tablespoons olive oil
  • 1/2 cup unsalted butter
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • Salt and black pepper to taste
  • Chopped parsley for garnish optional

Method
 

  1. Cook the fettuccine in a pot of salted boiling water until al dente. Drain and set aside.
  2. Season chicken with salt and pepper. In a large skillet, heat olive oil over medium heat. Cook chicken for 6–7 minutes on each side until done. Remove and slice.
  3. In the same skillet, melt butter and sauté garlic for 1 minute. Add heavy cream and bring to a simmer.
  4. Stir in Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  5. Add cooked pasta to the sauce, toss to coat. Top with sliced chicken and garnish with parsley if desired. Serve immediately.
