Easy Corned Beef and Cabbage

This corned beef recipe with cabbage is made in a slow cooker with potatoes and carrots for a quick and easy weeknight or St. Patrick's Day meal.

Ingredients
  

  • 1 3–4 lb corned beef brisket with spice packet
  • 4 large potatoes peeled and quartered
  • 4 carrots peeled and cut into chunks
  • 1 medium head green cabbage cut into wedges
  • 1 onion peeled and quartered
  • 3 cups beef broth
  • 2 tbsp brown sugar
  • 1 tsp black pepper

Method
 

  1. Spray the inside of the slow cooker with nonstick cooking spray. Gather all ingredients and pat the brisket dry.
  2. Place the brisket fat-side up in the slow cooker. Sprinkle the spice packet evenly over the meat.
  3. Arrange potatoes, carrots, and onion around the brisket. Pour in the beef broth, then sprinkle brown sugar and pepper.
  4. Cover and cook on LOW for 8 hours, until the meat is fork-tender and veggies are soft.
  5. Tuck cabbage wedges into the cooker, re-cover, and cook on HIGH for 15–20 minutes until crisp-tender.
  6. Transfer brisket to a cutting board and let rest 10 minutes. Slice against the grain for the most tender bites.
  7. Arrange slices of brisket on a platter, surround with vegetables, and ladle cooking liquid over top.
