Easy & Creamy Egg Salad Recipe

This egg salad recipe is easy to make with hard-boiled eggs, mayo, green onions, and mustard for a deliciously creamy salad perfect for sandwiches.

Ingredients
  

  • 8 large eggs
  • ½ cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 3 green onions thinly sliced
  • ¼ teaspoon salt
  • teaspoon freshly ground black pepper

Method
 

  1. Place eggs in a saucepan and cover with water. Bring to a boil, then simmer for 10–12 minutes. Drain and transfer to an ice bath to cool.
  2. Gently peel eggs and chop them into bite-sized pieces.
  3. In a bowl, stir together mayonnaise, Dijon mustard, salt, and pepper until smooth.
  4. Add chopped eggs and green onions to the bowl. Fold gently to coat.
  5. Cover and refrigerate for at least 15 minutes before serving.
