Method
- Place eggs in a saucepan and cover with water. Bring to a boil, then simmer for 10–12 minutes. Drain and transfer to an ice bath to cool.
- Gently peel eggs and chop them into bite-sized pieces.
- In a bowl, stir together mayonnaise, Dijon mustard, salt, and pepper until smooth.
- Add chopped eggs and green onions to the bowl. Fold gently to coat.
- Cover and refrigerate for at least 15 minutes before serving.
