Ingredients
  

  • 30 ounces frozen shredded hash brown potatoes
  • 2 10.5 ounce cans cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded sharp cheddar cheese
  • ½ cup finely chopped onion
  • ¼ cup unsalted butter melted
  • 2 cups crushed potato chips or corn flakes
  • Salt and freshly ground black pepper to taste

Method
 

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. In a large bowl, whisk together the cream of chicken soup, sour cream, melted butter, chopped onion, salt, and pepper until smooth.
  3. Gently fold in the frozen hash browns and 1½ cups of cheddar cheese, ensuring even distribution.
  4. Spread the mixture into the prepared baking dish, smoothing the top with a spatula.
  5. Sprinkle the remaining ½ cup of cheddar cheese and the crushed potato chips over the surface for a crispy finish.
  6. Bake for 40 minutes or until the casserole is bubbly and the topping is golden brown.
  7. Allow to rest 5 minutes before serving to let the layers set.
