Chewy oatmeal bars make a great grab-and-go breakfast! This base oatmeal bar recipe can be customized to your tastes with the addition of dried fruits, nuts, or chocolate chips.

Ingredients
  

  • 2 cups old-fashioned rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup brown sugar packed
  • 1/4 cup honey or maple syrup
  • 1 cup milk dairy or non-dairy
  • 2 large eggs lightly beaten
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup mix-ins dried cranberries, chopped nuts, chocolate chips, etc.

Method
 

  1. Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt. Mix well to ensure even distribution of the spices.
  3. In a separate bowl, whisk together the brown sugar, honey, milk, eggs, melted butter, and vanilla extract until smooth and well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until everything is thoroughly mixed.
  5. Fold in your chosen mix-ins gently, distributing them evenly throughout the batter.
  6. Transfer the mixture to the prepared baking pan, spreading it out evenly with a spatula.
  7. Bake for 30-35 minutes until the edges are golden brown and the center is set.
  8. Allow the oatmeal bars to cool in the pan for at least 15 minutes before using the parchment paper overhang to lift them out.
  9. Once completely cooled, cut into 16 squares and store in an airtight container.
