- Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt. Mix well to ensure even distribution of the spices.
- In a separate bowl, whisk together the brown sugar, honey, milk, eggs, melted butter, and vanilla extract until smooth and well combined.
- Pour the wet ingredients into the dry ingredients and stir until everything is thoroughly mixed.
- Fold in your chosen mix-ins gently, distributing them evenly throughout the batter.
- Transfer the mixture to the prepared baking pan, spreading it out evenly with a spatula.
- Bake for 30-35 minutes until the edges are golden brown and the center is set.
- Allow the oatmeal bars to cool in the pan for at least 15 minutes before using the parchment paper overhang to lift them out.
- Once completely cooled, cut into 16 squares and store in an airtight container.
