Ingredients
  

  • 2 pounds Italian sausage links sweet, hot, or a combination
  • 4 medium russet potatoes cut into 1-inch chunks
  • 2 large bell peppers red, yellow, or a mix, sliced into strips
  • 2 large onions sliced into half-moons
  • 4 cloves garlic minced
  • ¼ cup olive oil divided
  • ½ cup dry white wine or chicken broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • ½ teaspoon red pepper flakes optional
  • Salt and freshly ground black pepper to taste
  • Fresh parsley chopped, for garnish

Method
 

  1. Preheat your oven to 400°F (200°C) and lightly grease a large baking dish or rimmed baking sheet with olive oil.
  2. In a large bowl, toss the potato chunks with 2 tablespoons of olive oil, 1 teaspoon of Italian seasoning, paprika, salt, and pepper until evenly coated.
  3. Arrange the seasoned potatoes in a single layer in your prepared baking dish and roast for 15 minutes.
  4. While the potatoes begin roasting, combine the sliced bell peppers, onions, and minced garlic in the same bowl. Add the remaining olive oil, Italian seasoning, dried oregano, and red pepper flakes if using. Toss until everything is well coated.
  5. After the potatoes have roasted for 15 minutes, remove the dish from the oven. Add the sausage links, peppers, and onion mixture, arranging everything in a single layer as much as possible.
  6. Pour the white wine or chicken broth over the entire dish, which will help create steam and prevent the ingredients from drying out.
  7. Return the baking dish to the oven and continue roasting for 25-30 minutes, until the sausages are cooked through (internal temperature of 160°F), potatoes are tender, and vegetables are caramelized.
  8. For extra color, broil for the last 2-3 minutes if desired, watching carefully to prevent burning.
  9. Remove from the oven, sprinkle with fresh chopped parsley, and let rest for 5 minutes before serving.
