Ingredients
  

  • 1 teaspoon cooking spray
  • 1 medium onion chopped
  • 16 ounces frozen baby lima beans
  • cups low-sodium chicken broth
  • Salt and freshly ground black pepper to taste

Method
 

  1. Spray a large saucepan with cooking spray and warm over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the frozen baby lima beans and pour in the chicken broth. Bring to a boil.
  4. Reduce heat, cover, and simmer until beans are tender, 35 to 40 minutes, stirring occasionally.
  5. Season with salt and pepper before serving.
