Easy Mochi

Mochi are small Japanese cakes made with glutinous rice flour that have a soft, chewy outer layer and a deliciously sticky red bean paste filling.

Ingredients
  

  • 1 cup glutinous rice flour
  • ¼ cup granulated sugar
  • ¾ cup water
  • 1 cup sweetened red bean paste
  • Cornstarch for dusting

Method
 

  1. In a large microwave-safe bowl, whisk together glutinous rice flour, sugar, and water until smooth. Cover with plastic wrap.
  2. Microwave on high for 1 minute. Stir gently, then microwave another 1 minute until the mixture turns slightly translucent and sticky.
  3. Dust a work surface with cornstarch. Transfer the hot dough onto it and let it cool just enough to handle.
  4. Divide the dough into 8 pieces and roll each into a smooth ball.
  5. Flatten each ball, place 1 tablespoon of red bean paste in the center, then seal and reshape into a ball.
  6. Dust with more cornstarch to prevent sticking.
  7. Refrigerate for 30 minutes to set before serving.
