Ingredients
  

  • 10 6 inch corn tortillas
  • 8 ounces shredded Monterey Jack or Cheddar cheese
  • 1 ripe avocado sliced
  • 1 –2 tablespoons hot sauce
  • 1 tablespoon vegetable oil or cooking spray
  • Optional: fresh cilantro sour cream, lime wedges

Method
 

  1. Gather all ingredients and preheat a large skillet over medium heat.
  2. Lightly brush each tortilla with oil on both sides to ensure a golden, crispy finish.
  3. Place one tortilla in the skillet. Sprinkle a layer of cheese, arrange avocado slices, and drizzle hot sauce. Top with more cheese.
  4. Cover with a second tortilla, press gently, and cook until golden and cheese begins to melt, about 2–3 minutes per side.
  5. Transfer to a cutting board and slice into wedges. Repeat with remaining tortillas.
  6. Arrange quesadilla triangles on a platter, garnish with cilantro, and serve hot with sour cream and lime wedges.
