Ingredients
  

  • 4 cups fresh blackberries
  • ½ cup granulated sugar divided
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup milk
  • ½ cup unsalted butter melted
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
  2. In a medium bowl, gently toss the blackberries with ¼ cup of sugar and the vanilla extract. Let them sit for 5 minutes to macerate.
  3. In a separate bowl, whisk together the flour, remaining ¼ cup sugar, baking powder, and salt until well combined.
  4. Stir the milk into the dry ingredients until you have a smooth batter.
  5. Pour the melted butter into the prepared baking dish, then carefully spoon the batter over the butter—do not stir.
  6. Evenly distribute the macerated blackberries on top of the batter. The batter will rise around the fruit as it bakes.
  7. Bake for 50–55 minutes or until the top is golden brown and the berries are bubbling at the edges.
  8. Allow the cobbler to cool slightly before serving. Enjoy warm with a scoop of vanilla ice cream for extra indulgence.
