- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
- In a medium bowl, gently toss the blackberries with ¼ cup of sugar and the vanilla extract. Let them sit for 5 minutes to macerate.
- In a separate bowl, whisk together the flour, remaining ¼ cup sugar, baking powder, and salt until well combined.
- Stir the milk into the dry ingredients until you have a smooth batter.
- Pour the melted butter into the prepared baking dish, then carefully spoon the batter over the butter—do not stir.
- Evenly distribute the macerated blackberries on top of the batter. The batter will rise around the fruit as it bakes.
- Bake for 50–55 minutes or until the top is golden brown and the berries are bubbling at the edges.
- Allow the cobbler to cool slightly before serving. Enjoy warm with a scoop of vanilla ice cream for extra indulgence.
