Ingredients
  

  • 1 slice of sturdy bread white, sourdough, or whole wheat
  • 1 large egg
  • 1.5 teaspoons bacon grease or butter

Method
 

  1. Use a cookie cutter or a glass to punch a 2-inch circle out of your bread slice.
  2. Melt the bacon grease in a nonstick skillet over low heat to add smoky flavor and prevent sticking.
  3. Place the bread slice on the pan and let it brown for about 1 minute, then flip the cut-out circle to toast that side.
  4. Crack the egg directly into the hole and cook gently on low for 2 minutes, or until the whites set and the yolk is still runny.
  5. For a slightly firmer yolk, slide a spatula under the slice, flip the toast, and cook for another 30 seconds.
  6. Transfer to a plate, season with salt, pepper, or fresh herbs, and serve hot.
