Ingredients
  

  • 12 large egg whites approximately 1½ cups if using carton egg whites
  • cup crumbled feta cheese
  • ½ cup chopped fresh spinach
  • ¼ cup diced roasted red peppers
  • 2 tablespoons chopped fresh chives
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Salt and black pepper to taste
  • Cooking spray for muffin tin

Method
 

  1. Preheat your oven to 350°F (175°C). Generously spray a 12-cup muffin tin with cooking spray to prevent sticking.
  2. In a large bowl, whisk the egg whites until slightly frothy. Season with salt, pepper, garlic powder, and onion powder.
  3. Fold in the crumbled feta cheese, chopped spinach, diced roasted red peppers, and fresh chives. Gently mix until evenly distributed.
  4. Using a measuring cup or ladle, divide the egg mixture evenly among the prepared muffin cups, filling each about ¾ full.
  5. Bake in the preheated oven for 18-20 minutes, or until the egg whites are completely set and slightly golden around the edges.
  6. Remove from the oven and let cool in the pan for 5 minutes before carefully removing the bites with a spoon or small silicone spatula.
  7. Serve warm or allow to cool completely before storing in an airtight container in the refrigerator for up to 4 days.
