Fall-off-the-Bone Instant Pot Ribs

These sweet and spicy Instant Pot ribs use brown sugar and a tangy barbecue glaze for an American-style, family-pleasing dinner that’s ready in under an hour with a handy 30 minute timer.

Ingredients
  

  • 2 racks pork baby back ribs about 4 lbs total, membrane removed
  • ½ cup brown sugar
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • ½ tsp cayenne pepper optional for extra kick
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 cup water or apple juice
  • ½ cup barbecue sauce plus extra for serving

Method
 

  1. Pat ribs dry with paper towels. Remove the silver skin membrane from the back for ultra-tender results.
  2. In a small bowl, combine brown sugar, smoked paprika, garlic powder, onion powder, chili powder, cayenne, salt, and pepper. Mix well.
  3. Generously coat both sides of each rack with the spice mixture, pressing it into the meat for maximum flavor.
  4. Pour 1 cup water or apple juice into the Instant Pot. Place the trivet inside and arrange the ribs in a coil shape on top.
  5. Lock the lid and set the valve to sealing. Select High Pressure and set the 30 minute timer. Let it cook, then naturally release pressure for 10 minutes before switching to quick release.
  6. Carefully remove ribs; brush with barbecue sauce on both sides. Transfer to a baking sheet and broil for 3–5 minutes until caramelized.
  7. Slice between the bones, pile onto a platter, and serve with extra barbecue sauce, coleslaw, or cornbread on the side.
