Method
- Preheat your oven to 250°F (121°C).
- Carefully remove the silver skin membrane from the underside of the rib tips if present. Use a paper towel to grip the membrane and pull it off in one piece if possible.
- In a small bowl, combine the seasoned salt, garlic powder, onion powder, black pepper, smoked paprika, and cayenne (if using).
- Generously rub this spice mixture all over the rib tips, making sure to coat all sides thoroughly.
- Place the seasoned rib tips on a large piece of heavy-duty aluminum foil, then wrap them tightly, creating a sealed packet.
- Set the foil packet on a baking sheet and place in the preheated oven.
- Bake low and slow for approximately 7 hours, or until the meat is very tender and pulling away from the cartilage.
- In a small bowl, mix the barbecue sauce with honey or brown sugar (if using) and apple cider vinegar.
- When the rib tips are tender, carefully open the foil packet (watch out for hot steam) and drain off excess liquid.
- Brush the rib tips generously with the barbecue sauce mixture.
- Turn the oven to broil and place the sauced rib tips under the broiler for 3-5 minutes, or until the sauce is bubbly and slightly charred in spots.
- Remove from oven, let rest for 5 minutes, then serve hot.
