Favorite Old-Fashioned Gingerbread Cake

This gingerbread is easy to make (mixing up in just 10 minutes) and will remind you of Grandma's gingerbread recipe. It's moist, soft, and lightly spiced.

Ingredients
  

  • ½ cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • ½ cup unsulfured molasses
  • 2 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup hot water

Method
 

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch square baking pan.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the egg and molasses until smooth and well combined.
  4. In a separate bowl, whisk together the flour, ground ginger, cinnamon, cloves, baking soda, and salt.
  5. Gradually add the dry mixture to the wet ingredients, alternating with hot water, mixing just until the batter is smooth.
  6. Pour the batter into the prepared pan and smooth the top with a spatula.
  7. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool slightly before slicing. Serve warm with whipped cream or a dusting of powdered sugar.
