Fluffy Pancakes

This fluffy pancake recipe is easy to make for the best breakfast or brunch. Topped with butter and syrup or berries and cream — they're impossible to resist!

Ingredients
  

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup milk
  • 1 large egg
  • 2 tablespoons melted butter

Method
 

  1. In a medium bowl, whisk together the flour, sugar, baking powder, and salt until evenly combined.
  2. In a separate bowl, beat the egg and then whisk in the milk and melted butter.
  3. Pour the wet ingredients into the dry ingredients. Stir gently until just combined—the batter should be slightly lumpy.
  4. Heat a nonstick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.
  5. Use a ¼-cup measuring cup to pour batter onto the skillet. Cook until bubbles form on the surface, about 2 minutes.
  6. Flip pancakes and cook for another 1–2 minutes, until golden brown.
  7. Serve hot with butter, maple syrup, fresh berries, or whipped cream. Enjoy every fluffy bite!
