Fresh Tabouli Salad

Tabouli is a delicious Middle Eastern salad made with tender bulgur wheat, finely chopped parsley, mint, tomatoes, and lemon juice. This easy salad is light, vegan, and perfect as a refreshing side dish.

Ingredients
  

  • 1/4 cup bulgur wheat
  • 2 cups fresh parsley finely chopped
  • 1/2 cup fresh mint finely chopped
  • 2 medium tomatoes diced
  • 4 green onions thinly sliced
  • 3 tablespoons fresh lemon juice
  • 1/4 cup extra-virgin olive oil
  • Salt and pepper to taste

Method
 

  1. Place bulgur in a bowl and cover with 1/2 cup warm water. Let it soak for 10 minutes until tender, then drain any excess liquid.
  2. In a large mixing bowl, combine chopped parsley, mint, tomatoes, and green onions.
  3. Add the soaked bulgur to the bowl and toss with lemon juice and olive oil.
  4. Season with salt and pepper. Taste and adjust seasonings as needed.
  5. Chill in the refrigerator for at least 1 hour to let flavors meld.
  6. Serve cold or at room temperature as a refreshing side or mezze.
