Ingredients
  

  • 4 cups chopped fresh summer tomatoes about 6–8 medium
  • 1 tablespoon olive oil
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 2 cups vegetable or chicken broth
  • 1 tablespoon sugar optional
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons fresh basil chopped
  • 1/4 cup heavy cream optional

Method
 

  1. Heat the oil: In a large pot over medium heat, warm the olive oil until shimmering.
  2. Sauté aromatics: Add the chopped onion and cook until translucent, about 3–4 minutes. Stir in garlic and cook 30 seconds.
  3. Add tomatoes & broth: Pour in fresh tomatoes, broth, and sugar. Season with salt and pepper, then bring to a boil.
  4. Simmer: Reduce heat and let the soup bubble gently for 15 minutes.
  5. Blend until smooth: Carefully puree with an immersion blender or in batches.
  6. Finish: Stir in fresh basil and heavy cream. Adjust seasoning, warm through for 2 minutes.
  7. Serve: Ladle into bowls and garnish with basil leaves or a drizzle of olive oil.
