- Heat the oil: In a large pot over medium heat, warm the olive oil until shimmering.
- Sauté aromatics: Add the chopped onion and cook until translucent, about 3–4 minutes. Stir in garlic and cook 30 seconds.
- Add tomatoes & broth: Pour in fresh tomatoes, broth, and sugar. Season with salt and pepper, then bring to a boil.
- Simmer: Reduce heat and let the soup bubble gently for 15 minutes.
- Blend until smooth: Carefully puree with an immersion blender or in batches.
- Finish: Stir in fresh basil and heavy cream. Adjust seasoning, warm through for 2 minutes.
- Serve: Ladle into bowls and garnish with basil leaves or a drizzle of olive oil.
