- Heat olive oil in a large skillet over medium heat until shimmering.
- Add the diced onion and sauté for 3-4 minutes until translucent and beginning to soften.
- Add the minced garlic and cook for another 30 seconds until fragrant, being careful not to burn.
- Pour in the frozen peas (no need to thaw) and stir to coat with the oil and aromatics.
- Add the chicken stock, Italian seasoning, salt, and pepper. Stir to combine.
- Bring to a simmer, then reduce heat to medium-low and cover. Cook for 5-7 minutes until peas are tender but still bright green.
- Remove the lid and continue cooking for 2-3 minutes to reduce any excess liquid.
- Stir in the fresh parsley and grated Parmesan cheese.
- Taste and adjust seasonings as needed.
- If desired, add a pinch of red pepper flakes for a subtle heat.
- Transfer to a serving dish and serve warm.
