  • 2 tablespoons extra virgin olive oil
  • 1 small yellow onion finely diced
  • 3 cloves garlic minced
  • 4 cups frozen green peas
  • 1/2 cup chicken stock or broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley chopped
  • 1/4 cup grated Parmesan cheese
  • Pinch of red pepper flakes optional

Method
 

  1. Heat olive oil in a large skillet over medium heat until shimmering.
  2. Add the diced onion and sauté for 3-4 minutes until translucent and beginning to soften.
  3. Add the minced garlic and cook for another 30 seconds until fragrant, being careful not to burn.
  4. Pour in the frozen peas (no need to thaw) and stir to coat with the oil and aromatics.
  5. Add the chicken stock, Italian seasoning, salt, and pepper. Stir to combine.
  6. Bring to a simmer, then reduce heat to medium-low and cover. Cook for 5-7 minutes until peas are tender but still bright green.
  7. Remove the lid and continue cooking for 2-3 minutes to reduce any excess liquid.
  8. Stir in the fresh parsley and grated Parmesan cheese.
  9. Taste and adjust seasonings as needed.
  10. If desired, add a pinch of red pepper flakes for a subtle heat.
  11. Transfer to a serving dish and serve warm.
