Ingredients
  

  • cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 12-ounce can room-temperature pale beer
  • ¼ cup melted unsalted butter plus 2 tablespoons for brushing
  • cups shredded sharp cheddar cheese
  • ¼ teaspoon smoked paprika optional

Method
 

  1. Preheat your oven to 350°F (175°C). Generously coat a 12-cup muffin tin with non-stick spray.
  2. In a large bowl, whisk together flour, baking powder, garlic powder, salt, and smoked paprika if using.
  3. Pour in the beer and ¼ cup melted butter. Stir just until the dry ingredients are moistened—overmixing will toughen the muffins.
  4. Gently fold in the shredded cheddar. For pockets of molten cheese, leave a few heaping spoonfuls to sprinkle on top.
  5. Divide the batter evenly among the muffin cups. Top with extra cheese if desired.
  6. Bake 30–35 minutes, until golden brown and a toothpick inserted into the center comes out clean.
  7. Immediately brush tops with remaining melted butter. Let cool 5 minutes before serving.
