  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk room temperature
  • 2 large eggs beaten
  • 1/4 cup melted butter or vegetable oil

Method
 

  1. Preheat your oven to 425°F (220°C). Pro tip: Place a 9-inch cast-iron skillet in the oven to heat.
  2. In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine the buttermilk, beaten eggs, and melted butter.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  5. Carefully remove the hot skillet, add a small pat of butter to coat the bottom, and pour in the batter. The batter will sizzle—this gives you that golden crust!
  6. Bake for 15-20 minutes, or until the top is golden and a toothpick comes out clean.
  7. Let cool for 5 minutes before slicing into 12 warm, buttery wedges.
