Method
- Gather all ingredients. Having everything measured out before you start keeps the process smooth.
- In a large bowl, whisk together the flour, baking powder, salt, and sugar until evenly combined.
- In a separate bowl, beat the egg and then whisk in the milk and melted butter.
- Pour the wet ingredients into the dry ingredients. Stir gently until just combined; a few lumps are okay. Over-mixing can make pancakes tough.
- Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.
- For each pancake, pour about ¼ cup of batter onto the hot surface. Cook until bubbles form on top—about 2 minutes.
- Flip and cook for another 1–2 minutes, until golden brown and cooked through.
- Transfer pancakes to a warm plate and repeat with remaining batter.
