Ingredients

  • 2 large eggs beaten
  • 1 teaspoon salt
  • 1 cup whole milk
  • 2 cups all-purpose flour
  • ½ teaspoon baking powder

Method

  1. Gather your ingredients. Measure everything out so you can move smoothly from step to step.
  2. Mix dry ingredients. In a large bowl, whisk together the flour, salt, and baking powder until evenly combined.
  3. Combine eggs and milk. In a separate bowl, beat the eggs with the milk until smooth.
  4. Form the dough. Make a well in the center of the dry mix, pour in the egg-milk blend, and stir with a fork until a shaggy dough forms.
  5. Knead until smooth. Turn the dough onto a lightly floured surface and knead for about 5–7 minutes until it’s elastic and slightly tacky.
  6. Rest the dough. Wrap the dough ball in plastic wrap and let it rest at room temperature for 30 minutes.
  7. Roll and cut. Divide the dough in half. Roll each piece out to about 1/8-inch thickness, then cut into strips.
  8. Cook the noodles. In a large pot of salted boiling water, cook the noodles for 2–3 minutes until al dente. Drain and toss with butter or sauce.
