Method
- Gather your ingredients. Measure everything out so you can move smoothly from step to step.
- Mix dry ingredients. In a large bowl, whisk together the flour, salt, and baking powder until evenly combined.
- Combine eggs and milk. In a separate bowl, beat the eggs with the milk until smooth.
- Form the dough. Make a well in the center of the dry mix, pour in the egg-milk blend, and stir with a fork until a shaggy dough forms.
- Knead until smooth. Turn the dough onto a lightly floured surface and knead for about 5–7 minutes until it’s elastic and slightly tacky.
- Rest the dough. Wrap the dough ball in plastic wrap and let it rest at room temperature for 30 minutes.
- Roll and cut. Divide the dough in half. Roll each piece out to about 1/8-inch thickness, then cut into strips.
- Cook the noodles. In a large pot of salted boiling water, cook the noodles for 2–3 minutes until al dente. Drain and toss with butter or sauce.
