- In a large skillet over medium heat, cook the ground beef until no pink remains. Drain excess fat.
- Add chopped onion and garlic to the beef. Cook 3–4 minutes until fragrant and translucent.
- Stir in tomato sauce, ketchup, and water (or broth). Mix until evenly combined.
- Sprinkle in chili powder, paprika, cumin, mustard, brown sugar, and Worcestershire. Season with salt and pepper.
- Reduce heat to low. Cover and simmer for 2½–3 hours, stirring every 30 minutes to prevent sticking.
- If sauce is too thick, stir in a splash of water or broth. For thicker sauce, remove lid in the last 15 minutes.
- Spoon hot Coney sauce over grilled or steamed hot dogs, then top with diced onions and shredded cheese if desired.
